pot browniesWe’re at the height of Christmas season now.  There are a lot of ways to celebrate the birth of little 8lb 6oz baby Jesus – but one popular way in these parts is to bake.  Specifically, brownies and cookies.

Our friends at the Cannabist have done us all a huge public service by making Brownies easy (and safe):

The one crucial ingredient you’ll need on hand before you tear open that brownie mix is cannabutter or canna-oil. To get you on your way, we’ve put together some resources you’ll find useful if you’re not a master baker (sorry, love that old gag). Here’s how to make special brownies:

1) Start with a batch of cannabutter (or canna-oil).

Oregon-based edibles chef Laurie Wolf, who has contributed dozens of infused recipes to The Cannabist, has dialed it down to seven steps for what she calls “the best cannabutter in America.”

While many prefer to have cannabutter on hand, canna-oil is the other option. But should it be made with canola, olive, coconut or another type of oil?

If your box recipe calls for vegetable oil and all you have is cannabutter, not to worry — just use an equivalent amount of melted cannabutter. According to a BettyCrocker.com FAQ, they’re interchangeable, just know that “using butter or margarine will make your brownies slightly richer with a bit of ‘dairy’ taste.”

2) What should the serving size be?

Ah, the thrill of using math in real life. Learn the formula for figuring out the approximate THC potency for your brownies. Our Ask The Cannabist columnist has a rundown from Colorado edibles chef and author Jessica Catalano. Get out your scratch paper and calculator! Consider figuring out the potency of the cannabutter you’re starting with and keep your calculations on hand for future use. Or you can figure out dosage for each recipe, whether it’s brownies or cookies, or something on the savory side.

3) What about the effects?

If this is your first foray into eating edibles as well as making them, learn about what to expect, and why it’s important to be patient, grasshopper. For those unfamiliar with regulations in legalized states, the Colorado-mandated dosage for commercial edibles is 10 milligrams of THC per serving. If you’re a seasoned smoker, don’t assume a big slab of chocolatey goodness is the best way to start.

Peanut Butter Canna-Kiss Cookies:

Ingredients

  • 3/4 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup CannaButter, softened
  • 1/2 cup peanut butter
  • 1 egg
  • 3/4 teaspoon vanilla extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups flour (or CannaFlour)
  • 3/4 teaspoon baking soda
  • 1/4 cup sugar (for coating)
  • 24 Hershey kisses, unwrapped

Method

  1. Beat together sugar, brown sugar, CannaButter and peanut butter in bowl until light and fluffy.
  2. Add egg, vanilla and salt, beating until mixed well.
  3. Add flour and baking soda, continue beating until all ingredients are mixed.
  4. Refrigerate dough for 30 minutes to firm. Preheat oven to 375 degrees.
  5. Shape dough into inch-round balls. Rough cookie dough balls into sugar, place an ungreased cookie sheet.
  6. Bake in preheated oven for 8 minutes or until very lightly golden brown.
  7. Immediately press a chocolate kiss into the middle of each cookie, cookie will crack around edges. Transfer cookie to cooking racks.
  8. Cool for 10 minutes before serving.
